Sometimes I just need a hunk of carbs. And sometimes I have a severe lack of self control. Granted, I had just returned from a 45 mile bike ride, but this sweet potato fry recipe I teach you how to make in the video below is just so darn good that I mowed through the entire pan (equivalent of 2 sweet potatoes) in about 5 minutes flat.

Yes, I know that in the video I said it was a multi-day quantity of potato. But I was hungry. Enjoy!

By the way, did you know sweet potatoes have a myriad of surprising benefits? Among the brag sheet of this lowly tuber includes antioxidants, anti-inflammatory nutrients, and blood sugar regulating compounds.

I even eat 2 or 3 sweet potatoes before every triathlon I do.

So how do you like your sweet potatoes? Leave your comments or questions below.

Do you eat them with the skin or without, wondering if extra fiber or skin can cause digestion problems

You say "I even eat 2 or 3 sweet potatoes before every triathlon…" do you eat sweet potato fries, or do you bake sweet potatoes & eat them?

I bake or steam mine and put some coconut oil and cinnamon on mine, yum.

    Ben,

Thanks for the recipe. They are great! I actual tried making them before this post and they did not turn out as well. As for your on handed pepper grind you should watch alton brown on david letterman. He has a solution for grinding pepper quick plus how to make homemade yogurt.

I LOVE sweet potatoes, think I could live on them if I had to. I like to top mine with chili (sounds weird I know). Also great just baked until the brown sugary syrup oozes out. I scrub them really well and even eat some of the skin. I can see why Usain Bolt wore orange shoes – in honor of the Jamaican yam.

I do not particularly digest potato skins well (especially sweet potato skins); do you have any good/easy methods of removing the skins prior? Also, you site/blog is incredible and really is the best kept secret in the online fitness world. Thanks for everything you do.
